Much more slowly than an untreated tree, which is the entire point of the anti-UV specification. Olive foliage is silver-green to begin with, so what fading does occur over years is less obvious than it would be on a strong green leaf.
Can this go outside?
Yes. The materials are water-resistant as well as UV-treated, so terraces, courtyards and restaurant frontages all work. It is equally at home indoors if you want the Mediterranean note without the exposure.
